if you just watched tutorials you will never truely understand the power of geomtry nodes, but did you know it it could be used for modeling, rigging, texturing, particles and more, lets look at some crazy geometry nodes demos.
helmet
https://www.reddit.com/r/blender/comments/1ql5zjz/procedural_helmet_animation/
starting with this modeling demo by thor freestyle, what i love about this is how you could probably do this way faster and easier using traditional modeling but it would not be as fun, and because this is made with geometry nodes, everything is procedural, you can change the design and shape of the helmet, the attachements, and any other details, procedurally, i guess thats why they choose to use geometry nodes instead of traditional modeling, thor_freestyle also has alot more great demos on his reddit account and is someone i would greatly recommend you followif you want to get better at geometry nodes
amazing motion graphics
next up we have one of the best motion graphics breakdowns and its from a studio called dot4, this is a professional studio that uses blender as its main dcc and they are doing motion design animation for banks, and other businesses, if you want to build a portifolio to get client you can use there works as a measure to see what quality you should strive for and with there detailed breakdowns you can get a glimplse on how they archive it. they use alot of geometry nodes, curves and keyframe timings to get those smooth animations, but dont let the smooth animations fool you, setting them up is a nightmare, you also have to do alot of keyframe offsets that blender does not have a tool for that actually why i made my free extra keyframe addon you will find the links in the description, its the easiest way to change the timing for multiple objects annd you will definately need it if you are making motion design animation.
voronoi shapes
the voronoi texture is one of the most important texture in 3d, its what the cell fracture addon uses for fracturing models, a building or city generator, and its what houdini uses to fracturing models as well, its used in capenicus and substance designer to create scifi panels, so seeing that fares asem was able to use it to generate actual geometry in geometry nodes is amazing, this makes creating destruction detail really easy, and you can see in there demore that with just a few slight changes, you can see a structure for those rounded courner scifi panels you see everywhere, am just waiting for him to drop the setup so i can use it for my own projects.
fracture
and if you are still doughting the power of voronoi see what jesse miettinen is doing with it, creating a whole rbd system with, it from adding cracks fracturing, and settingup collision shapes, voronoi is a foundation of many effects we use in different projects including terrains and height maps, scifi textures and more.
mountains
speaking of terrains lets take a look at hiranoji's mountain range generator, i love how they have designed it to work on simple faces that are turned into mountain ranges, with all the materials done for you, the one thing that is missing perhaps, is an erosion map for the textures, that why most of the detail you see on the mesh is lost when you add the material,
breakdown
if you are a fun of the last of us series, you will love this breakdown from kpsd, they use blender to setup everything and if you so the final render you may think it was pulled directly from the tv show,
they also have other fun projects and breakdowns on there twitter page am sure you will love them
butt physics
next up, i want to introduce you to layla a 3d modeler who know what there audience wants, here they demostrate jiggle physics and how you can set it up to, and when i went on a discovery journey my self to learn how its done turns out jiggle physics is not that hard, you can also use it to do tail and tentacle animations like what i did here in my upcoming course, yes am making a new course, not sure what it will focus on but we will definately cover jiggle physics, and if you want this squid tentacle project you can find it on gumroad or patreon
